These "Ice Cream Sundaes" are not what they seem to be. Inside the waffle bowl there is a round of cake, topped with strawberry Simply Fruit, then a round of brownie. The "ice Cream" is actually icing made with extra confectioners sugar to make it thick, scooped out and topped with Wilton candy melts (for the hot fudge look), sprinkles and a cherry put on while the choc is still soft. These were birthday cakes for two of my friends. Had the waitress bring them out and tell them it was their new birthday dessert. When they dug in I had another "gotcha" moment. It is getting harder and harder to come up with something special.

This was a fun cake to make and everyone seemed to enjoy it. I had the waitress deliver it right after our meals were brought out and say "here's your spaghetti and meatballs". Several people including the manager commented on it and told me I should sell my cakes but then it wouldn't be fun. Thanks for looking.

Jon's new riding lawnmower

Jon just recently got a new mower and when he unloaded it he started doing "donuts" on the lawn.  So what else would I make for a birthday cake for him!  Enjoy.

Dinosaur land

My 5 year old granddaughter, Addie, loves dinosaurs, so for her birthday I did a dinosaur land complete with dinosaurs, waterfall & and stream.  The boulders in the waterfall were cupcakes coated with chocolate candy coating.  The "mud" around the water pool was crushed graham crackers and the stones around the water were edible candy stones.

Jack-o-lantern cake

This cake was made for my son, who wanted a jack-o-lantern cake that actually lit up.
I used 2 bundt cakes and a 9" round to get the size. Then cut out the top and attached a stem made from chocolate clay. Next, I carved out the inside and the face. When I got to the mouth it tried to collapse so my husband took a cookie cutter and reshaped it to be a mouth with teeth and we put it in place. Once iced, I put a candle inside and lit it.

Dooney and Bourke handbag cake

This cake was a replica of the Dooney and Bourke handbag that is directly behind it and was my first attempt at carving a cake after starting to watch Ace of Cakes. The dark brown trim is made from chocolate clay and the cake is iced in buttercream as I do not care for fondant.
I measured the bag and made templates of the ends so I could carve it. The cake itself is several layers-I baked a large sheet cake and cut the layers from it. Cutting all the little DB's was time consuming as was putting all the "stitches" in the handles and trim pieces.

Vase Cake / 4 Tier Wedding Cake

The first cake is a Lenox vase in cake form with fresh flowers which I did for a friends birthday. I started with 4 6" layers of cake and 2 6" brownie layers. The bottom layer was yellow cake, then pink with raspberry flavoring and then the brownie layer. Between the layers was raspberry Simply Fruit. I did put dowels thru the bottom 3 layers, then a cake board and three more layers with a dowel thru all six layers.
Next, I used a travel lotion bottle with the top cut off to cut a hole in the top for the flowers. The bottle was inserted in the hole and water and flowers added. I also put flower spikes around the top to bring the flowers down to cake level.The cake was iced with buttercream icing and then I copied the design from a Lenox vase onto the cake.
The best part was when the birthday girl walked into the dining room, the lights were out with just candlelight on either side of the cake and thought it was a vase of flowers.

The wedding cake was for my son and daughter-in-law's wedding. I baked the cake and his Uncle Darryl and I decorated it. I had never done a wedding cake before so I was most grateful for Darryl's help since he had made many in the past. Of course, he was the one who volunteered us to do it in the first place!

Flip Flop Birthday Cake

This cake was made as a birthday cake for a friend who loves flip flops.

Start by making a large enough sheet cake to be able to cut and stack it for the shoebox. I used 2 Duncan Hines Butter recipe yellow cake mixes,which had cooled completely.

I measured a shoebox and cut layers to size, including a brownie layer on the bottom (most of my cakes have a brownie layer in them). Between the layers I used raspberry Simply Fruit. If you pipe icing around the edge of the layer it will keep the fruit filling from squeezing out. To make the lid, I used a slightly larger layer and trimmed it to fit.

Next ice it with your favorite buttercream frosting Decorate it to match a favorite brand or the person's favorite colors. Where the label would go use the date, or the person's initials.

The flip flop itself was a little more difficult. For this I used Chocolate Clay. You melt 10 oz of chocolate chips in the microwave ( I start with 1 min. and stir. If not completely melted do it again in 20-30 sec. intervals). When melted add 1/3 cup light corn syrup and mix well with a spatula until all the syrup is mixed in and the mixture forms a ball. Place on wax paper, spread to about 1/2" thick and let sit for about 2 hours. It will become very pliable-much like modeling clay. Then roll it out. Cut a flip flop shape out of card board and cover it. Then add clay straps and decorate the straps with candy. Place the shoe on top and you are done.
If you have any clay left, place in a sealed container and it will keep for several weeks at room temperature. Items made from the clay will harden in a few days if left in a cool, dry location.

This is a really simple cake to make but gives a really great impression.
Start with your favorite 9" round 2 layer cake, I prefer Duncan Hines but I do make a few changes in it. In place of the water I add milk and in place of the oil I use 1 stick of softened butter. Next you'll need a 9" brownie layer, I use Duncan Hines Dark Chocolate Fudge. When the layers are completely cooled, stack them (cake, brownie, cake) using raspberry Simply Fruit between the layers instead of icing. Next ice the cake with your favorite homemade icing or use a Duncan Hines Chocolate Frosting. Before the icing sets, take Pepperidge Farm Pirouette Rolled Wafers and stand them up around the cake to give it a basket effect. Tie some ribbon or raffia around the middle, add handles if you want and fill the center with fresh raspberries, then enjoy! You can substitute strawberry filling and fresh strawberries if you would like.
